Ingredients

1 pound very fresh yellowfin tuna steak, cut into 1/4-in. dice
3 tablespoons snipped fresh chives
½ cup Moondance Marinade
Kosher salt and freshly ground black pepper, to taste
¼ cup Bold As Love Honey-Habanero Mustard
3 Japanese or Kirby cucumbers
1 teaspoon black sesame seeds, toasted

SPICY TUNA ROLLS

  1. In a medium bowl, combine the tuna, chives and the Moondance Marinade. Season with salt and pepper. Cover tightly with plastic wrap and refridgerate.
  2. Using a mandoline, slice the cucumbers lengthwise as thinly as possible into approximately 5-in. lengths. Season with salt and pepper to taste. Place one heaping teaspoon of marinated tuna on one end of the cucumber slice. Roll up cucumber tightly. When very thinly sliced, the cucumber will stick together without the use of a toothpick. Continue making rolls with the remaining ingredients.
  3. Place a small dollop of Bold As Love Honey-Habanero Mustard on top of each roll and sprinkle with toasted sesame seeds.
