Phil Lempert, about Healthy Super Bowl Snacks

When I heard I was going to be interviewed by the SuperMarket Guru, Phil Lempert, about Healthy Super Bowl Snacks... I was all a glow. After all, at the time it was scheduled my hometown Chargers still had a shot.

I was so happy, I even started naming my recipes after the Chargers (you know.... Cha-Cha Charger Chicken Wings). Well, I don't have to tell you that name is a little out of context at this point.

You might be asking what this vegetarian-sauce maker-woman knows about Football? Well, I will have you know.... I had my own football uniform, I could tell you the cities and teams... and some of the neighborhood boys were kind of scared of me!

Just to prove that I am not bitter that my hometown Chargers didn't get to the SuperBowl: I am "betting" on the Patriots. I hope you enjoy these super healthy, SuperBowl Recipes (sans cutsey names)!

Panko Crusted "Chicken Wings" with Moondance Marinade and Bold as Love Honey Habanero Mustard

1 Cup Panko Breadcrumbs
1 Pound Boneless Chicken Breast or Chicken Tenders -- cut into 2" strips
1 Large Egg -- lightly Beaten
Non-stick Cooking Spray

1/2 cup Moondance Marinade
2 T. Bold as Love Honey Habanero Mustard
Splash Burning Desire Roasted Habanero Hot Sauce

1) Place Panko Breadcrumbs in a bowl
2) Place lightly beaten egg in a shallow bowl (it is okay to splash the Burning Desire Habanero Hot Sauce into the egg mixture.
3) Dip Chicken Tenders in the egg -- then toss into the Breadcrumbs
4) Spray Non-stick Cooking Spray on Broiling pan or Cookie Sheet -- place chicken tenders
5) Cook for about 5 minutes until they are just about close to being done
6) In a bowl, mix 1/2 cup Moondance Marinade, 2 T. Bold as Love Honey Habanero Mustard and Splash Burning Desire Roasted Habanero Hot Sauce.
7) Toss almost cooked Chicken Tenders into the mixture.
8) Place back in the broiler for another minute or so -- turn over -- with another minute or so to finish
9) Enjoy!!

1) Place Panko Breadcrumbs in a bowl

Salmon Tacos -- What's Going On Soy Pear Ginger Korean Teriyaki or Moondance Marinade
Marinate One Pound of Salmon in What's Going On Soy Pear Ginger Korean Teriyaki . Grill Salmon for about 8 minutes per inch.

Halibut Tacos - Moondance Marinade: Zesty Cilantro, Red Cabbage)
Marinate One Pound of Halibut in Moondance Marinade. Saute marinated Halibut in olive oil cooking sprayed pan.

Corn Tortillas
Freshly made pico de gallo salsa
Tomatoes
Onions
Red Cabbage
Cilantro
Lime
Avocado Slices
And of course.... Burning Desire Habanero Hot Sauce
